So you’ve finally decided to quit letting somebody else make all the money off your cattle. You’ve got the herd. You’ve got customers asking for beef. You’ve found a processor you trust. Now all you need is a website, a freezer, and enough patience to survive government paperwork without developing a twitch. Truth is, selling beef directly from your ranch in Oklahoma can be a mighty good business. More profitable too.

The good news is selling beef direct-to-consumer is completely legal in Oklahoma if you do it proper. The trick is understanding which rules matter, which processors you can use, and how not to accidentally wind up sideways with the state or federal government.

A calf takes near 18 months to raise proper. During that time somebody’s feeding him, doctoring him, moving him from pasture to pasture, fixing fence he tears down, hauling hay through mud, watching the weather, fighting flies, worrying over drought, paying taxes, fixing equipment, and trying not to go broke while doing it.

Most ranchers in Northeast Oklahoma know the routine by heart. Raise a steer for 18 months or better, haul him to market, take whatever price the buyers are feeling generous enough to offer that day, and hope there’s enough left over to keep feed in the barn and diesel in the truck.
